An Italian cook is never happier than when wielding a mezzaluna. Shaped like a half-moon (hence the name), this heavy, durable kitchen tool rocks though chopping and mincing tasks with speed and precision. Onions, carrots, celery, garlic, parsley--all the aromatics for a proper soffritto--can be quickly made ready for the soup, sauce, or risotto pot. Made in Italy, the 6-1/4-inch-wide mezzaluna has a thick stainless-steel blade to resist corrosion and discoloring and is beveled on both sides to a sharp edge. The handle is thick and soft, providing both comfort and a firm grip. Though it's dishwasher-safe, this tool should be hand washed to preserve the sharp edge. --Fred BrackChoppers & Mincers
